Strawberry Avocado Toast
6 slices of Gluten free Sourdough bread
1 1/2 avocado
1/2 lemon, juiced
4-5 large strawberries, sliced
60g low fat goat’s cheese
a few parsley leaves for decoration
Using a hand blender, blend the avocado with the lemon juice until smooth. Alternatively you can use a fork to roughly mash the avocado.
Toast the bread under the grill, or in a toaster until slightly brown.
Spoon the avocado onto the toast and spread then top with the chopped strawberries and goat’s cheese.
Return under the grill for a few more minutes.
Top with chopped parsley and serve!
