INGREDIENTS
1 Tbsp olive oil
½ cup onion, chopped
2 cloves garlic, minced
1 small jalapeño, chopped (optional)
1 head cauliflower (3 cups cauliflower rice)
Salt and pepper, to taste
Juice of 1 lime
⅓ cup fresh coriander, chopped

INSTRUCTIONS

In a large frypan over medium heat, drizzle olive oil and sauté onion 3 to 4 minutes then add garlic and jalapeño, sautéing an additional minute.
Increase the heat to medium-high and add the riced cauliflower to the frypan, season with salt/pepper and cook until cauliflower is soft and tender, about 5 to 7 minutes, stirring frequently.
Remove cauliflower rice from heat and mix in the lime juice and coriander. Serve and enjoy!
